- 1 cup brown rice any kind of rice works well
- 15 oz can black beans, drained, use pinto beans instead
- 2 cups sweet corn, frozen or canned
- 2 cups vegetable broth
- 1 lime, juiced
- ¼ cup green bell pepper, diced
- ¼ cup red pepper, diced
- ½ cup red onion, sliced
- 1 cup diced tomatoes
- 2 tablespoons olive oil
- A handful of cilantro, fresh, chopped
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- 1 tablespoon garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon chili flakes
- Cracked Kosher salt
- Freshly cracked black pepper to taste
- Grated Cheddar Cheese, freshly chopped green onions (optional extra)
Instructions
- Preheat your oven to 400-degrees Fahrenheit.
- Heat the olive oil in the casserole dish (if it is safe to use on the stovetop – otherwise, use a skillet); lightly caramelize the onions. Add the corn, garlic, and peppers, saute until there is a little more color on the veggies.
- Mix the vegetable broth with cumin, smoked paprika, chili powder, and chili flakes. In a large saucepan, warm the mixture up over medium-high heat.
- In the casserole dish, spread the drained black beans, corn, onions, and pepper mixture. Sprinkle the uncooked rice over the vegetables. Sprinkle the chopped tomatoes on top.
- Once the vegetable broth mixture is gently boiling, remove it from heat and slowly pour over the rice mixture. Make sure the liquid is evenly poured into the casserole dish. Cover the casserole dish with a sheet of aluminium foil.
- Bake in the oven for 60 minutes. Remove the bean casserole from the oven and remove the foil to check the doneness of the rice; if you need more liquid, add a little extra broth and return to the oven for 10 – 15 minutes. If you are topping the casserole with cheese, sprinkle the cheese over the black bean mixture. Place under a grill for 5 – 6 minutes until it is melted and golden.
- Remove from the oven and set the casserole aside for 10 minutes to settle. Serve the black bean casserole in the dish for an authentic serve-from-the-dish dinner. Top the dish with chopped green onions, fresh cilantro, and your favorite side.
